A Little Summer Fun!

The FoodSmiths recently helped Big Rock Little Rooster celebrate their Badcock Apparel Summer Party with a little food, refreshing drinks, and a lot of fun.  People on the streets loved the live models and the lovely window display of food. Sous Chef Peg did a wonderful job setting up our display; it was both alluring and delicious!

Two of the biggest hits of the night were our Basil Raspberry Lemonade and the Strawberry & Citrus Herb Lemonade. Man, they were winners! But the whole menu was a great success as well. Here was the menu:

– Our famous Asparagus Tips wrapped in Proscuitto  with our tarragon cream

–  Delightful Strawberries with Citrus Cream

– Gorgonzola Grapes

-Michigan cherries, crumbled bleu & candied walnuts phyllo tartlets was a warm compliment to its cool companions.

The tone of the night was fun, energetic and light with a menu to match.  Thanks to Big Rock Little Rooster for letting us join their summer fête. Here are some pictures from Saturday night:

We had such a great time last year meeting new people. We are looking forward to seeing new faces as well as reconnecting with last year’s friends.

Here’s a picture from last year of Chef Gretchen serving up little bite sized deliciousness. Look how the Strawberry & Citrus Infused Water just speaks to you. Yummy! Come check us out at the Taste of Dublin this Tuesday.  See you there!

Food For Thought

The Marburn Academy, located just south east of I-71 and 161 in Columbus, is a school that educates “bright children who learn differently.”  As members of the ISACS, they will be hosting a group for a day full of discussion and administrative business.  We are excited to cater this special event and give these administrators and educators some necessary food for thought.

A well balanced meal is key in creating good brain activity. We have put together some boxed salads that will get those productive minds flowing. Check out some pictures below.

Strawberry Mista Salad...mixed greens, toasted almonds, gorgonzola, bacon and strawberries topped with grilled chicken and served with our balsamic vinaigrette.

Cobb Salad...fresh chopped romaine and spinach, bacon, egg, cheddar, ham, turkey, grilled chicken, tomato and gorgonzola served with our creamy parmesan dressing.

Italian Chop Salad...fresh greens chopped with tomato, cucumber, red onion, feta, Kalamata olives and grilled chicken, served with our house Italian dressing.

Rain, Rain Go Away…

As Spring approaches, the unwelcome signs of winter’s last parade reminds us that we’re not completely done with cold weather yet.  Fortunately, brief moments of hope, a day of sunshine or temperatures above 50 degrees, help us to remember that spring is on the way! But what about now? How can find some immediate “spring relief”?  I have devised a plan to beat the post winter gloom.

Create a spring-like environment by lightening up your color palette. Think BRIGHT! A lovely flower arrangement can liven up any room.  Add some vibrancy to your dining experience with colorful cups, plates, and bowls, which sets the tone for a delicious and visually exciting meal. Try crisp green vegetables, bright red tomatoes, orange & yellow bell peppers.  I just had some great strawberries from Florida yesterday.  I love when they are small and packed with flavor!

Here are a few of my favorite Spring Things:

–Pastel Colors: like lavender, blues, greens
–Colorful Foods: strawberries, apples, bananas, limes, cilantro
–Reese’s Cup Eggs (darn you, you’re so good)
–Flowers: daffodils, tulips
–Crisp white fabrics with colorful accents

What are your favorite Spring Things? Find them and create a space that gives you a ray of sunshine!

Helping Out the Community

Have you ever wondered what happens to all the delicious food that is leftover after a catering event? Well, this mystery will now be solved.  We don’t like seing things go to waste, especially if those in need can benefit from a great meal.  After a recent event for the Associated Industries for the Blind, the food that was leftover was donated to the South Side Settlement House in downtown Columbus.  There are so many ways to help out the community and people in our neighborhood.  This was an excellent way for us to use our talents in the kitchen to assist a local food pantry that impacts the lives of the impoverished every day. Bravo to South Side Settlement House!  Thanks for giving us a chance to make a difference in our community.

Sous Chef Peg and one of South Side’s gracious staff members unloading sandwiches, wraps, and amazing Red Velvet & Carrot Cake Cupcakes. South Side even had cream cheese icing to put on top of the cupcakes!

Congratulations to AIB

I have been fortunate to work with such great companies recently and Associated Industries for the Blind, AIB, is no exception.  AIB hosted their grand opening reception for lunch today and even though it rained incessantly, spirits were high.  They are a base supply company located on the DSCC base (Defense Supply Center Columbus) which provides employment opportunities for people who are blind or have other severe disabilities.  To learn more about AIB, visit their website.

Congratulations to ‘Dress for Success’ for last nights ribbon-cutting and grand reopening

Last nights festivities were a great way to dedicate the new look and new location for the Central Ohio chapter and to praise all of those involved in making it happen. The FoodSmiths was proud to donate a large portion of the catering for last night’s celebration.

Check out what we served.

Dinner Party at North Bank Tower

One of my favorite things to do are dinner parties in the client’s home.  A special intimacy allowed only by the relaxed pace of ones home, makes the evening more enjoyable for everyone.  It’s the ease of staying home without the work.  Our goal is to leave the kitchen cleaner than when we arrived.

The evening began with  Sweet & Spicy hand-rolled meatballs and phyllo cups filled with dried cherries sauteed in cabernet, blended with gorgonzola cream featuring a candied walnut.  The seated meal started with lemon sorbet drowned in champagne with fresh raspberries.  Then came the salad course.  The client had a special memory of a seafood salad when dining in the Cayman islands and we recreated it by serving a Marinated Shrimp & Scallop salad tossed with diced avocado in our honey-lime cilantro vinaigrette paired with fresh greens.  The pasta course was hand-rolled pici (pronounced pee-chee) pasta tossed with sun-dried tomato cream sauce topped with a petit fillet of sauteed salmon.  The evening’s main course was dry rub roasted beef tenderloin paired with blackberry chipotle espresso reduction and herbed goat cheese.  We finished the meal with a dark chocolate mousse topped with fresh whipped cream and raspberries.

A note from the Chef

Welcome to our new blog!

Many posts will be coming from our Facebook page as I update things like events (what I’m doing and where), purchasing (it may not seem interesting at first, but what would you do with 12 lbs of duck fat?!) and other fun food things…  But I will post more lengthy articles and updates that will be unique to this blog.  So check back often!  And hopefully we’ll get a chance to see each other soon.
